Squash – ingredient which can be prepared in various way and with addition of various products. This vegetable is perfectly combined with tomatoes, a paprika, onions, carrots. And especially well to cook squash with potatoes.

The recipe of vegetable stew with squash and potatoes

For preparation it will be required to you:

- squash – 2 pieces;

- carrots – 2 pieces; - onions – 1-2 pieces; - a paprika – 1-2 pieces; - tomatoes – 4 pieces; - potatoes – 5-6 pieces; - garlic – 2-3 cloves; - vegetable oil; - salt, pepper – to taste. Prepare ingredients. Crush onions. Grate carrots through a large grater. On the warmed frying pan pour in a small amount of vegetable oil, pour out the crushed onions, leave slightly to be fried. Add carrots.

While onions with carrots are fried, cut large pieces potatoes. Shift it in a frying pan. Cut a paprika thin strips, also add to other vegetables. Clean squash, remove from them seeds, cut in small cubes and shift in a frying pan. Fry vegetables within fifteen minutes. Cut tomatoes semicircles and add to vegetables. Salt, pepper ragout. Carry out garlic through a press, add it to ragout. Mix a dish, reduce fire to a minimum, cover a frying pan and leave to be extinguished for twenty minutes.

Potatoes with squash, stewed in sour cream

This dish is considered an excellent nourishing garnish. For preparation it will be required: - potatoes – 600 g; - squash – 600 g; - tomatoes – 3 pieces; - a paprika – 1 piece; - onions – 1 piece; - garlic – 1 clove; - sour cream – 150 g; - flour – 100 g; - greens – 1 bunch; - salt, a sprinkling pepper – to taste; - bay leaf – 1-2 pieces; - vegetable oil. Clean squash, wash, remove seeds and cut them in cubes. If you take young squash, the thin skin doesn't need to be deleted. Small chop onions and fry it to a golden shade in a stewpan. Add the carrots ground on a grater and the pepper cut by straws. Fry vegetables within five minutes. Add squash. Sprinkle them with flour. Leave to be fried for ten minutes, periodically stirring slowly. When squash become golden, shift in advance cut potatoes in a stewpan. Salt, pepper and accurately mix a dish. Remove a thin skin about tomato and cut them in cubes. Shift to other vegetables. Add small chopped garlic. Pour in 200 ml of hot water in a stewpan, add bay leaf. Leave to be extinguished for ten-fifteen minutes. When vegetables are stewed to semi-readiness, add sour cream and chopped greens. Cover a stewpan, make small fire and leave for ten minutes. Before giving decorate a dish with greens.
