How to make domestic grape wine

Grape wine — one of the most ancient and useful drinks. The daily use of 50 ml of the real dry wine increases appetite, normalizes pressure, reduces risk of cardiovascular diseases.

It is required to you

  • — grapes of vintage varieties: isabella, muscat, Cabernet;
  • — 10- or 20-liter bottles with a plastic cover;
  • — vinyl tubes.

Instruction

1. Separate grape berries from clusters. Touch, deleting the spoiled and rotten berries. If on grapes there is no dust, then berries don't need to be washed because on a thin skin there are bacteria favoring to fermentation.

2. Crush grape berries a pestle, a press or the juice extractor. Merge juice in the metal or enameled capacity through a colander.

3. Leave juice for several days at a temperature about 28 wasps. During this time juice has to rise up, and to settle cake on a bottom. Filter juice through several layers of a gauze, wring out cake. Pour juice in ten- or twenty-liter bottles. Fill them on 2/3 that the mash didn't overflow at fermentation.

4. Close bottles a plastic stopper with an opening into which insert a vinyl tube. Through it there will be carbon dioxide. Lower other end of a tube in a bottle with water. Thus the water lock turns out — oxygen doesn't get to a bottle with future wine. Instead of a cover on a stopper it is possible to pull a rubber glove.

5. Leave containers with wine at the room temperature to wander for a month. When fermentation ends, merge a young wine, deleting a deposit. At will add sugar. Pour wine on bottles, close a stopper and place for 3-4 months in a cellar (the dark room with a constant temperature). During this time dry domestic wine with a strength not higher than 5 degrees will turn out.

6. Carefully merge drink, without shaking up a deposit, in other ware if you want to receive more strong sweet wine. Fill in a young wine in a clean bottle. Add 50-150 g of sugar on 1 liter of wine.

7. Close capacity a stopper with a tube again and leave for 1.5-2 months. So at you semisweet or sweet grape wine with a strength of 10-12 will turn out;. The more sugar you put, the stronger wine will turn out. However consider that process of fermentation stops after achievement of fortress higher than 14-15.
