It is required to you

  • 2 kg of a melon (the pulp weight without crusts is considered);
    • 5 cups of sugar;
    • 1 lemon;
    • 50 g of a root of ginger;
    • vanillin or cinnamon (at will).

Instruction

1. Take a ripe melon, the grade "Torpedo" most of all will approach. Cut in half, remove seeds and cut out pulp. Then chop it cubes with the party no more than 1 cm and put in a pan. Clean a root of ginger and rub on a small grater. Put in one capacity with a melon. Squeeze out juice of a lemon and pour there. Grate lemon zest, add to juice. Pour 2-3 tablespoons of sugar, mix everything. Leave mix in the cool place for 2-3 hours.

2. Prepare a sugar syrup. For this purpose take 100 g of sugar per 1 l of water. Heat syrup to sugar remelting, but you don't boil. Shift the melon pieces mixed with gingerby and lemon there. You cook on average fire about 15 minutes. Then add still some sugar - about 2 articles is one kilogram fresher than a melon. Continue to cook jam, constantly stirring slowly. By the end of cooking it has to become dense. For test drip a little on a cold plate - if jam doesn't spread, it is possible to consider it ready. If desired in the middle of preparation pour into mix a little vanillin for aroma. Cinnamon powder can be also interesting addition, but you shouldn't use it together with vanillin.

3. Prepare tanks for packing of jam. Sterilize glass jars and metal covers in the boiling water within several minutes, then dry. Cool ready jam a little that banks didn't burst from hot contents. Pour it on tanks and close banks covers by means of the seamer. It is the best of all to store jam in the dark cool place, for example, in a cellar or in a case and after you open a jar - in the fridge.
