In Soviet period liverwurst was one of the most favourite products of the population, however presently it is quite difficult to find a product of the same quality. But it is possible to make liverwurst in house conditions, sausage will turn out very tasty and fragrant.

It is required to you

  • - 1.5 kilograms of a beef lung;
  • - 1.5 kilograms of beef heart;
  • - 500 grams of beef liver;
  • - 300 grams of lard;
  • - 500 milliliters of water;
  • - 8 eggs;
  • - 3 big bulbs;
  • - 3 tablespoons of a ground black pepper;
  • - 1 teaspoon of ground cardamom;
  • - 2 heads of garlic;
  • - salt;
  • - small pork intestines.

Instruction

1. Carefully wash a baking plate with flowing water a lung and heart. After that take two big pans, pour in them cold water, then in one pan place a beef lung, and in another - heart. You cook on average fire within 1-1.5 hours.

2. While the main ingredients cook, peel onions from a peel by means of a sharp knife, wash out and dry it then small chop. Take lard and cut small pieces, too small you shouldn't cut, otherwise cracklings will turn out.

3. Prepare beef liver. First of all carefully wash its baking plate with flowing water, then cut on pieces of the average size. Fry a liver, trying not to overroast, further put aside.

4. Take a frying pan to fry lard and the chopped onions. Oil a frying pan and warm on average fire, further lay out on it fat pieces. As soon as fat becomes transparent, lay out to it onions.

5. When onions gain golden color and will soften, lay out already fried pieces of beef liver in this frying pan. Fry the mixed ingredients within 2-3 minutes.

6. Take the meat grinder and a big pan. Miss via the meat grinder the boiled beef heart, the boiled lung and also the overroasted liver with lard and onions. Then crush garlic, add salt and necessary spices, carefully mix all ingredients.

7. Knead forcemeat to a uniform state. Once again crush the received weight for preparation of liverwurst, it is the best of all for these purposes to use the blender or the food processor.

8. Begin to add to forcemeat eggs on one. Carefully mix weight, it has to turn out homogeneous and quite liquid. Gradually begin to add boiled water.

9. Take pork guts and fill them with the turned-out forcemeat. On fire put a pan with water, place sausages there and you cook within 35 - 40 minutes. On the expiration of time take out liverwurst, dry and fry in a frying pan.

10. Home-made liverwurst is ready!
