Besides compotes, cookings and a stuffing for pies from cowberry it is possible to make sour sauce which perfectly will approach fish, meat dishes and bird dishes. Some types of cowberry sauce aren't bad combined with ice cream.

It is required to you

  • For the first recipe:
    • cowberry – 200 grams;
    • sugar – 2 tablespoons;
    • water – 100 milliliters.
    • For the second recipe:
    • cowberry – 500 grams;
    • water – 1 liter;
    • sugar – 250 grams;
    • starch – 10 grams;
    • white dry wine – 100 grams;
    • ground cinnamon.
    • For the third recipe:
    • cowberry – 1 glass;
    • balsam vinegar – 2 tablespoons;
    • sugar – 1 tablespoon;
    • garlic – 1 clove;
    • dried thyme – a quarter of a teaspoon;
    • salt;

Instruction

1. For preparations most idle time of the version of cowberry sauce wash out berries. If you use the frozen cowberry, defreeze it. Fill in berries with boiled water and you cook within fifteen minutes on average fire.

2. Mash berries or wipe through a sieve, add sugar and you cook within five minutes on slow fire, constantly stirring slowly. This sauce will approach both meat dishes, and sweet desserts.

3. To make cowberry sauce with cinnamon, wash berries and choose from them leaves. Fill in the prepared cowberry with water and bring to the boil. Cast away berry on a colander. Pour out water in which cowberry cooked in a bowl and cool.

4. Depending on what consistence of sauce will be required to you, crush cowberry in the blender or crush a spoon. Perhaps, the dish to which you are going to serve cowberry sauce will look more effectively with sauce in which berries are visible.

5. Divide water in which cowberry, on two parts cooked. Add starch to one part of water and stir it. Add the remained water, sugar, wine and a droplet of cinnamon to the crushed cowberry. Put mix on fire, bring to the boil and boil within five minutes. Add the divorced starch to sauce, again bring liquid to the boil and immediately remove from fire.

6. For preparation of spicy cowberry sauce for meat pour out vinegar in a bowl and let's it stand within ten minutes. Add to vinegar the washed-out cowberry berries, the crushed garlic, seasonings and salt to taste. Sugar can be put in this sauce, and it is possible and not to put – it depends on your preferences. Put berry on slow fire and, stirring slowly, bring to the boil.

7. In five minutes remove sauce from fire, cool and mix in the blender. Shift the received mix in a bottle with a wide throat and remove in the fridge. It is better to cook this sauce in advance as it will be much more tasty if infuses within several days.
