Sturgeon – the real delicacy. Gentle, tasty meat of this fish doesn't demand some special spices and it is difficult to spoil it. Long since sturgeon dishes are decoration of the Russian table. Sturgeon is cooked, fried in the test and crackers, baked on skewers and in an oven.

It is required to you

  • For sturgeon
    • baked with parmesan:
    • 2 - 1.5 kg of sturgeon;
    • 4 eggs;
    • 300 g of sour cream;
    • 5 glasses of 6% of vinegar;
    • 50 g of a desi;
    • 120 g of parmesan;
    • 50 g of olive oil;
    • 5 lemons;
    • 5 glasses of bread crumbs;
    • nutmeg (pinch);
    • For sturgeon
    • baked with parmesan and mushrooms:
    • 750 g of fillet of sturgeon;
    • 800 g of potatoes;
    • 1 glass of sour cream;
    • 4 tablespoons of a desi;
    • 2 eggs;
    • 200 fresh cepes (or champignons);
    • 50 g of parmesan;
    • 2 tablespoons of flour;
    • vegetable oil;
    • black sprinkling pepper;

Instruction

1. Sturgeon, baked with parmesanVymoyte sturgeon under a stream of cold water. Dry a paper towel, rub with salt and put for 2 hours to the cool place.

2. Cook hard boiled eggs. Cool, clean and separate the yolks from the whites. Knead a fork yolks, connect to sour cream and pound to homogeneous mass. 9. Put sturgeon with potatoes and mushrooms in the oven warmed up to 200 degrees. In about 5-6 minutes the fish has to become covered by an appetizing crust.

10. Before giving on a table strew sturgeon with small cut fennel greens.
