1. Upon purchase of fish in shop surely pay attention to its freshness. It shouldn't have an unpleasant odor. When pressing by a finger on pulp, it has to be rather elastic and get into condition quickly. If there are doubts in freshness of a product, it is better to refuse purchase at once. It can be hazardous to health. Prepare fish for culinary processing. Carefully wash out in cold flowing water. If it is necessary, cut on flank steaks. That steaks turned out juicy, gentle, with spicy aroma of spices, they need to be pickled previously. For this purpose it is enough to put of them in the glass or enameled bowl, to salt, add a little pepper of a coarse grinding and to water with lemon half juice. Cover and leave in the cool place for 15-20 minutes.

2. Meanwhile, cut the second half of a lemon and tomato thin circles. Make ""court shoes"" of a foil by the size of fish pieces: cut off a piece of a foil and you zashchipnit edges from two parties that the design in a form reminded the boat.
