Potato nests with peas and quail eggs

Potato nests – for those who want to have a rest a little before turmoil of holidays and at the same time a tax on a table something tasty and special.

Nests are a simple and effective dish. Potatoes which are a basis can be boiled the day before therefore process of direct preparation of a dish won't take a lot of time.

Products:

  • Potatoes 750 гр.
  • Eggs 130 гр.
  • Oil 100 гр.
  • Fresh peas of 100 g.
  • Eggs (quail) 85-70 гр.
  • Salt.
  • Nutmeg.
  • Parmesan.

How to prepare:

  • Save potatoes from a peel and weld in boiled water, having slightly salted. Crush ready vegetable the meat grinder or the blender. 
  • To mashed potatoes to hammer three yolks and to add the melted oil. Strew with nutmeg and mix. 
  • Pound proteins to a white skin and connect to puree. 
  • The syringe confectionery to gather a potato basis (or to remove a corner at a usual bag) and to squeeze out nests on parchment. Width of preparations there have to be 11-10 cm. 
  • Bake 22-20 minutes (180 degrees).
  • Take out ready puree from the furnace, fill deepenings with peas and to hammer into the middle of everyone on a quail small egg. 

Sprinkle with salt and again to send to heat for 5-4 minutes.

It is desirable to give at once from the furnace. Sprinkle with plentifully grated parmesan. An unusual and colourful garnish to many dishes.
