- Beef (one piece) – 900 grams;
- celery scapes – 7 pieces;
- carrots – 300 grams;
- parsley – 1 bunch;
- dry red wine – 500 grams;
- pears – 3 pieces;
- carnation bud – 3 pieces;
- the black pepper ground – 1 teaspoon;

Instruction
1. Pears peel also cores and cut lengthways on 4 parts.
2. Put them in a pan, fill in with wine, add a carnation and allspice, bring to the boil and you cook within 3 – 4 minutes.
3. Let's pears cool down. Then cut on segments 1 centimeter thick and put back in a pan with wine. Put in the fridge for 1.5 - 2 hours.
4. Grate beef sirloin with salt and pepper, oil and close a film. Leave for 30 minutes.
5. Warm a frying pan and fry beef from two parties to a golden crust.
6. Put a frying pan with meat in the oven heated to 220 degrees and prepare within 20 minutes.
7. Slice carrots and a celery thin, and crush parsley.
8. Spread out vegetables on a baking sheet, you will sprinkle oil and prepare in an oven about 12 minutes. Let's cool down.
9. Slice the cooled-down roast beef thin. In the center of each slice lay a few vegetables, season with salt and pepper, roll.
