How to make mushroom nettle dumplings

Vareniki can be done absolutely with any stuffing. I suggest you to experiment a little, having made them with a nettle and mushrooms.

It is required to you

  • For the test:
  • - flour - 280 g;
  • - semolina - 50 g;
  • - eggs large - 3 pieces;
  • - olive oil - 1 tablespoon;
  • - small sea salt - 1 teaspoon;
  • - cold water - 1 tablespoon.
  • For a stuffing:
  • - onions shallot - 2 pieces;
  • - a desi - 60 g;
  • - leaves of a young nettle - 200 g;
  • - salt;
  • - chanterelles - 200 g;
  • - potatoes - 3 pieces;
  • - egg - 1 piece.

Instruction

1. Flour, having connected together with salt, sift through a sieve not less than 2 times. To this dry-mix add semolina and also crude eggs, olive oil and cold water. Properly mix everything before obtaining uniformity then knead dough - it has to turn out abrupt. Wrap up it in either a plastic bag, or food wrap and remove in the refrigerator for 30 minutes.

2. Having cleaned and having crushed onions shallot on small pieces, lay out it on a frying pan and fry on a desi tablespoon. Then add to it leaves of a young nettle. Pepper and salt the received weight. Having removed it from fire and having shifted in separate ware, cool then remove in the fridge for some time.

3. Carefully wash out mushrooms under flowing water then dry. If for preparation of mushroom vareniki you use the frozen chanterelles, then just defreeze them. Weld to full readiness, then cool and crush.

4. Having carefully washed out potatoes, boil it in slightly added some salt water to full readiness. When it is ready, remove from it a peel and miss through a sieve. To the received potato weight add mix from a nettle and onions and also one crude egg and small cut chanterelles. Mix everything properly. The stuffing for mushroom vareniki is ready.

5. Turn dough into flat layer and cut out from it by means of ware with a round throat small circles. On edge of each of them place on one teaspoon of the received stuffing. Cover weight with the free party and record future vareniki. Having stuck together them, let's them stand at the room temperature for 30 minutes.

6. Mushroom nettle dumplings are ready! It was only necessary to boil them.
