Small baskets from shortcake dough - a beautiful and tasty dessert. As a stuffing it is possible to use berries and fruit on a season, cream, jam, etc.
How to make small baskets
Sift 500 g of flour and strew with soda (1/2 teaspoons). In the middle of the flour hill make a crater.
In advance shift a desi (300 g) from the fridge to the warm place that it it was softened. Knead oil a fork that it became soft and viscous as mashed potatoes. In separate ware shake up 4 yolks and 300 g of sugar, add vanillin, 1/2 teaspoons of salt and the kneaded oil. Well stir everything in homogeneous mass and shift in deepening in flour. Knead dough, roll it in the form of a log, sprinkle with flour and leave for 40 minutes.
Then cut dough on pieces, roll them about 5 mm thick and cut out circles with a diameter of 9 cm. Put circles from the test in molds and to press densely that the bottom and deepenings in walls were filled. Put molds on a baking tray and bake in the oven warmed to 240-250 hail. Take out and cool ready small baskets.
Apples stuffing
On one small basket 1 apple, a teaspoon with the mound of sugar will be required. Wash a half of apples, husk, remove a core and slice. Put the cut apples in a small pan, add sugar, a little citric acid and you extinguish on the minimum fire until ready. If apples badly boil soft, add a little water. Cook other apples whole. Spread out apple puree on small baskets, from above lay half of the circles cut from the whole apples and apricot jam.
Whipped cream stuffing
Cream with fat content not less than 30% is suitable for beating. Previously they are required to be cooled well, but not to freeze. Shake up no more than 250 g of cream for time, otherwise they can be stratified on oil and serum. Shake up cream before foam texturization and gradually add 30 g of icing sugar, continuing to shake up. When cream ceases to spread and will keep a form, spread out them on small baskets.
