Slippery jacks − some of the most widespread mushrooms growing in the territory of Ukraine, Belarus and Russia. Slippery jacks appear at the end of June and it is possible to collect them till late fall. During the summer they give several layers.

Slippery jacks like to lodge in the coniferous light forests, numerous groups. They grow in solar forests where there is a pine. With roots of this tree forms symbiosis a mycelium of slippery jacks. These mushrooms prefer a cover from a moss or a small grass. It is possible to find them and under pine needles which fell down from trees. Slippery jacks don't like to grow on sphagnum swamps, lowlands, the peat earth. These mushrooms don't transfer the remoistened soil.

In what time slippery jacks grow                                                                                           

The first slippery jacks appear at the end of June. The term of their fructification proceeds two weeks. Then mushrooms completely disappear. The following layer of slippery jacks appears in the middle of July. Mass fructification of slippery jacks begins with the middle of August to the middle of October.

Appearance of slippery jacks

The mushroom of butterdishes received the name because of the slippery thin skin covering its hat. It as if is painted with oil, glossy paint. 

Slippery jacks have many versions. Color of their hat has scale from yellow to light brown.

Slippery jacks are mushrooms on the fan. Some mushroom pickers consider them the best mushrooms. But there are fans of forest hunting who don't recognize them in general.

Slippery jacks − mushrooms medium-sized. They have the small or average size. The largest radius of a hat can reach seven centimeters.

Pulp of mushrooms soft, often watery, yellowish-whitish color. On a cut some types mushrooms can change coloring: darken or become blue. As it is correct to process slippery jacks

The garbage often sticks to a sticky hat of slippery jacks. Therefore it is better to clean mushrooms at once, on the place of collecting.

If there is a lot of mushrooms, then it is possible to clean them in the fast way, in house conditions. There is one cunning. Slippery jacks for several minutes should be placed in hot water. Then the thin skin will depart from mushrooms easily.

What slippery jacks can't be collected

The slippery jacks growing near the industrial enterprises, more than other mushrooms are inclined to accumulate hazardous substances. More they accumulate radioactive caesium. Therefore slippery jacks don't recommend to collect near the big industrial enterprises, brisk highways.

As it is correct to prepare slippery jacks

From slippery jacks in house conditions cook various dishes. They are fried, cooked in soup. Slippery jacks are put in julienne. It turns out very tasty, fragrant. Also they are added to various dishes.

The original recipe of a pudding with slippery jacks

Ingredients (at the rate on three portions):

  • 400 grams butter;
  • 400 grams of white crackers;
  • 150 grams of wheat flour;
  • 60 grams of a hard grated cheese;
  • 3 eggs;
  • two tablespoons of a melted desi;
  • two tablespoons of sour cream;
  • salt;
  • 50 ml of milk.

Way of preparation

Boil mushrooms in the water which is added some salt to taste two minutes, cast away on a colander. Small to cut the dried slippery jacks. Fill in crackers with hot milk. When mix cools down, to add to it the desi (pounded with crude yolks), mushrooms, salt and flour. Mix has to it will turn out as dense sour cream. Then to beat whites in abrupt foam and to mix accurately in dough. The prepared mix is poured out in the form greased with fat and baked in an oven. Serve the dish warm, having watered with melted butter and sour cream.

Who isn't recommended to eat slippery jacks

Not all people will be done good by slippery jacks. Mushrooms are considered as heavy food - because of the chitin which is contained in them, lignin and cellulose. Slippery jacks aren't recommended to be used to people during exacerbations of stomach ulcer, pancreatitis. And also patients should exclude them from a diet, having a renal failure and diseases of a liver. Children shouldn't give dishes with slippery jacks, because of weakness of their alimentary system too.
