It is required to you

  • For preparation of a basis of a lunch:
  • - 1 chicken quarter;
  • - 1 kg of pork stew;
  • - water;
  • - black pepper peas;
  • - 1 carrots;
  • - 1 bulb.
  • For potato dumplings
  • - dumplings dough;
  • - mashed potatoes.


1. Buy 1 chicken quarter and 1 kg of pork stew on a stone. Carefully wash out everything, put in a pan, fill in with 5 liters of cold water. Close a pan a cover, put on strong fire. As soon as water in a pan begins to boil, reduce fire. Scum with a surface broth and continue to cook bones on small fire within 2.5 hours.

2. Clean 1 bulb and 1 carrots, put entirely in a pan to ham and ragout. Add a black pepper peas, salt to taste and continue to cook 1 more hour.

3. After the end of cooking pull out ham and stones on a plate. Cast 1.5 liters of tasty rich broth in a separate pan. Crumble in it a little meat. On the basis of this broth cook any soup according to your desire. If broth very strong - dilute it with water. It is rather simple to fill up in it vermicelli, to bring to the boil and a thin stream, continuously stirring slowly, to pour in 1 frothed eggs. When giving on a table strew such soup with greens, season with sour cream or mayonnaise.

4. Cut off meat from pork stew and ham, crush it. Divide meat into two unequal parts. Put the most part in a plate, add small cut garlic and boiled carrots. Fill in all with broth and put in the fridge for hardening. Jelly is ready.

5. Slightly fry the remained meat with onions and mix with boiled pasta.

6. You cooked soup for two days and two dishes for dinner: jelly which can be served with boiled potatoes, and pasta with meat.

7. Make mashed potatoes dumplings. Make puree, mix it with fried onions. If desired add the crushed and fried fat. Well mix everything. The stuffing is ready.

8. Roll dumplings dough in layer, a mug cut out from it circles. A teaspoon spread on them a stuffing and well pinch.

9. Lay out vareniki on the cutting board sprinkled with flour and put in the freezer before full hardening. Put the frozen vareniki in a plastic bag and you store in the freezer.

10. Lower vareniki in the boiling added some salt water and you cook until ready, periodically stirring slowly. Give on a table with butter or sour cream.
